The Vegetarian Spot (aka The V-Spot for purpose of this proposal, name will possibly be amended) – A ‘semi’ fast-food vegetarian pickup/takeout spot targeting a wide spectrum of customers from diehard meat-eaters and everyday omnivores to established vegans seeking a new place to add to their list of eat-out options. With a guarantee to utilize local produce, distributors, and small businesses as much as economically feasible, our primarily plant-based menu will be tailored to regional seasons, changing three-four times a year: First Season is April 1st–June 30th; Second Season is July 1st– September 30th; Third/Fourth Season is October 1st – March 31st. During First Season we will offer varieties of immune boosting spring-green salads and veggies, lighter soups, pasta and grain centered meals, sandwiches, berry smoothies and other treats. During Second Season we will kick off our gorgeous summer with a bang by showing off the freshest, most colorful menu our region has to offer from a beautiful array of salads, to healthy, fun, yet satisfying summer street food mains—can you say tacos, pizza, BBQ, all vegetarian/vegan–and refreshing greens and fruit-based beverages and goodies to help cool off and maximize those phytonutrients. And, during Third/Fourth Season we will prepare for the cold by dishing up hearty soups and stews, rich root vegetable and squash mains, vitamin-D packed mushrooms for the shorter, darker, sun-deprived days, breads/rolls/baked goods, cleansing ginger teas, showcasing our famous Washington apples and pumpkins in drinks and desserts. Our customers and our community are our priority. Our business is pandemic proof. While we will start with a pickup/takeout model, we leave the door open for future expansion to include food festivals, seasonal outdoor seating, event catering, online order curb-side drive up (not to be confused with drive-thru), and eventually indoor dining options.
